Pork cuts explained: chops, ribs, roasts and slow-cooking cuts
Short answer: Pork from the loin is lean and cooks fast; pork from the shoulder, leg and belly has more connective tissue and fat and rewards slower cooking. These answers explain the cuts and what to do with them.
What is a center rib pork roast?
A center rib roast comes from the loin and includes rib bones. It is naturally tender and suited to roasting. Use a thermometer and cook intact pork to at least 145°F, followed by a three-minute rest.
What is a pork blade steak?
Blade steak is cut from the shoulder. It has more fat and connective tissue than a loin chop, which gives it good flavor. Grill thinner steaks carefully or braise thicker ones until tender.
What is a pork shoulder chop?
A shoulder chop comes from the front of the hog, not the loin. It is flavorful and often well marbled, but it can be firmer. A marinade or slower, moister cook can help.
What is pork cube steak?
Pork cube steak is usually a shoulder or leg cut that has been mechanically tenderized. Treat it as raw pork, prevent cross-contamination and follow the package cooking instructions.
What is pork flank steak?
Pork flank is a thin cut from the belly-side area with visible grain. It cooks quickly and benefits from slicing across the grain.
What is the difference between pork jowl and jowl bacon?
Pork jowl is the uncured cheek area. Jowl bacon is that cut after curing and usually smoking. Read the label because cured, uncured and fully cooked are different product statements.
What is cottage bacon?
Cottage bacon is made from the pork shoulder or collar rather than the belly. It is usually meatier and leaner than belly bacon, but curing and smoking still give it bacon-like flavor.
What is pork back fat used for?
Back fat can be rendered into lard or added in controlled amounts to sausage and other preparations. Render it slowly, strain it cleanly and refrigerate or freeze it for storage.
Is leaf lard the same as back-fat lard?
No. Leaf fat comes from around the kidneys and is especially mild; back fat comes from under the skin along the back. Both can be rendered, but they may differ in flavor and baking performance.
What are pork hocks used for?
Hocks come from the lower leg and contain bone, skin and connective tissue. They add body and pork flavor to beans, greens, soups and braises after a long cook.
What is the difference between a ham hock and a pork shank?
Both come from the lower leg. A ham hock is commonly cured or smoked; a fresh pork shank is uncured. The label tells you whether it is fresh, cured, smoked or fully cooked.
What are pork neck bones good for?
Neck bones contain small muscles, connective tissue and bone. Slow cooking makes them useful for broth, beans, greens and sauces. Watch for small bone fragments when serving.
How do I cook pork cheeks?
Pork cheeks are small, rich working muscles. A slow braise breaks down their connective tissue and makes them tender. Brown first for flavor, then cook gently until a fork slides in easily.
What is fresh side pork?
Fresh side pork is uncured pork belly. Bacon is pork belly or another cut after curing and often smoking. Fresh side pork should be cooked and handled as raw pork.
What are country-style pork ribs?
Country-style ribs are meaty strips cut from the shoulder end of the loin or from the shoulder; they are not always true rib sections. Check whether they are lean or heavily marbled before choosing a quick cook or a braise.
What is the difference between St. Louis ribs and spareribs?
St. Louis ribs are spareribs trimmed into a more rectangular rack by removing the breastbone, cartilage and flap. They cook more evenly; whole spareribs give you those extra pieces to use too.
Are bone-in pork chops better than boneless chops?
Neither is automatically better. Bone-in chops make a handsome presentation and may cook a little less evenly near the bone; boneless chops are easy to portion. Thickness and final temperature matter more.
What is the difference between a rib chop and a loin chop?
A rib chop comes from the rib end of the loin and usually has one curved bone. A loin chop comes farther back and may include tenderloin on the other side of a T-shaped bone. Both are tender, quick-cooking cuts.
What is pork sirloin roast?
Pork sirloin roast comes from the hip end of the loin. It is leaner and has more muscle groups than a center loin roast, so careful cooking and thin slicing help keep it tender.
Should I buy a skin-on or skin-off picnic roast?
Choose skin-on if you want crackling or to protect the roast during a long cook. Choose skin-off when you want easier seasoning and shredding. Either way, shoulder needs time for its connective tissue to soften.
