Why it doesn’t dry out
A grocery-store bird
is grown to slaughter weight in six or seven weeks. The muscle goes on faster than the fat and connective tissue that keep it moist, so it turns to sawdust the moment you overshoot.
Ours
takes eight to ten weeks on pasture. Half again as long, and that extra month is where the intramuscular fat and the real connective tissue come from. That is what buys you the margin for error — and what you taste.
Our birds live on green pasture, scratching through clover and grasses, chasing bugs and picking at seed heads. Their supplemental feed is Non-GMO and mineral-rich. It is slow farming, and it costs us more, but it is the only way to get a bird like this.
From the farm
I put one on the rotisserie and got called away by a neighbor. It ran a full hour longer than I planned. I figured we would be chewing on jerky — it came off juicy and tender. That is not a trick. That is what slow growth on real forage does for a bird. — Bob
How to cook it

Roasted. 350°F oven, breast up on a rack. Pull it at 165°F in the thickest part of the thigh — roughly 20 minutes a pound gets you close, but the thermometer decides. Salt it the night before and leave it uncovered in the fridge — dry skin is crisp skin.

Rotisserie. Truss it tight so nothing flops and run it at 350°F until the thigh reads 165°F — usually somewhere around an hour and a half. This is the method the bird is most forgiving on.

Spatchcocked. Cut out the backbone and press it flat, then 350°F to the same 165°F. Laid flat it runs faster than a trussed bird at the same heat — call it an hour — and the breast and thighs finish together.

Then use the frame. Cover the carcass with water, simmer it four hours, and you have stock that sets to jelly in the fridge. A grocery bird will not do that.

165°F is the only number that matters. Every time above is an estimate — birds vary, ovens vary, and a thermometer costs less than a ruined dinner. Measure at the thickest part of the thigh, not touching bone, then rest it fifteen minutes before you carve.
