    What makes it different
    A mustard sauce
    Gold sauces are a South Carolina tradition — mustard instead of tomato, sharper and much less sweet. Most people have never had one, and are surprised the first time.
    The peach
    Peaches and spices are what make this Kentucky's version rather than Carolina's. The fruit takes the hard edge off the mustard.
    What it is best on
    Chicken, and wings above all. A mustard sauce does something on poultry that a tomato sauce cannot, which is the argument for keeping two bottles in the fridge.
    If you have only ever had red barbecue sauce, this is the one to try next. It is not a variation on what you know — it is a different idea.

    How to use it
    1
    On wings: sauce them after they come off the heat, not before. Mustard sauces do not need to caramelize.

    On a shoulder or a chop, brush it on in the last ten minutes and let it set.

    Thin it with a little vinegar and it becomes a dressing for slaw. Mustard slaw with pulled pork is how Carolina does it.

    Straight from the bottle it is a dip, and it is very good with anything fried.
