What makes it different
It is not one muscle
A sirloin chop is cut where the loin runs into the hip, so you get two or three different muscles and a piece of hip bone in the same chop. They do not all cook at the same speed.
Firmer, and worth the trouble
There is more connective tissue here than anywhere else on the loin. Treated like a center cut chop it can come out tight. Given a marinade or a longer, gentler cook, it is the best-value pork on this page.
Do not fight the cut. Marinate it, or cook it slow. An hour in buttermilk or cider vinegar before it hits the heat changes this chop completely.
From the farm
We keep these in the freezer for busy weeks. They go in a marinade frozen in the morning and come out ready to grill by supper, which is not something we would say about a center cut chop.
How to cook them

Marinate first if you have the time. An hour is enough. Something acidic — buttermilk, cider vinegar, citrus. It softens the connective tissue before the heat ever touches it.

Grill or sear over medium, not high. Four minutes a side. High heat tightens this cut faster than it cooks it.

145°F, then rest three minutes. Then cut the muscles apart. They run in different directions, so slice each one across its own grain.

Or braise them instead. Covered, 300°F, about ninety minutes. The connective tissue that makes this chop firm is the same thing that makes it silky if you cook it long enough.
