The picnic is the lower shoulder — the arm. More sinew than the butt above it, and more flavor once it has had the time it needs.

What makes it different
Butt on top, picnic underneath.
A whole pork shoulder splits into two roasts. The butt is the upper half. The picnic is the lower half, running down toward the hock.
It works harder, so it takes longer.
There is more connective tissue and more sinew here than in the butt. Give it the same eight hours and it will not be ready. Give it eleven and it is better than the butt.
The flavor is in the work.
Hard-working muscle carries more of what pork actually tastes like. This is the cut whole-hog cooks have always reached for.
If you have only ever pulled a butt roast, a picnic is worth the extra two or three hours — the meat comes out darker, and it tastes more like pork.
From the farm
We sell the picnic separately from the butt rather than as one nine-pound shoulder, because almost nobody has a pan that size.
How to cook it

Score the outside. A shallow diamond pattern cut through the fat but not into the meat lets the rub and the heat both get in.

Low and patient. 250°F for ten to twelve hours on a five-pound picnic. It is slower than a butt roast of the same size.

Wrap once the bark sets. Around 165°F, wrap it in foil or butcher paper and keep going.

Take it to 200°F. Then rest it a full hour wrapped, in a cooler or a turned-off oven, before you pull it.
