What makes it different
It comes off the shoulder end
The loin runs from the shoulder to the hip. This is the shoulder end, where the muscle starts breaking into separate pieces and the fat runs through it instead of sitting on the edge.
Cheaper because it is untidy, not because it is worse
A rib end chop will never look as neat as a center cut. It has seams of fat and more than one muscle in it. That is also why it tastes like more.
If you have been disappointed by pork chops before, start here. Fat is insurance. There is enough of it in a rib end chop that a minute too long will not ruin your supper.
From the farm
This is the chop we cook for ourselves most often. It costs less than the center cut and we think it eats better, which is a hard thing to put on a price list.
How to cook them

Season and let them sit. Half an hour on the counter. Cold meat and hot fat make a tough chop.

Start them fat side down. Render the fat edge first. Stand them on that edge in the pan for a minute and you get fat to cook the rest in.

Then sear flat. Three minutes a side over medium-high. The seams of fat need a little longer than a lean chop does.

145°F and a three-minute rest. Or take them further on purpose. Held at a low simmer in cider or stock for an hour they go soft instead of firm. Both routes work on this cut.
