What makes it different
Mild means no chili
Italian sausage is defined by fennel, not by heat. Leaving the crushed red pepper out makes it the version children will eat, and the version that works when the sauce brings its own heat.
Links, not bulk
In a casing, so they stay whole. On a grill, in a bun with peppers and onions, roasted on a sheet pan with potatoes, or simmered whole in a sauce.
We sell it in bulk too
Same seasoning, loose, if you would rather break it up in the pan.
Sheet pan, 400°F, sausages and whatever vegetables are in the drawer. Thirty minutes and dinner is done — it is the least demanding meal on this site.
FROM THE FARM
We raise our hogs on pasture here in Monticello, Kentucky, and have every animal cut at a USDA-inspected plant down the road. We raise them, we have them cut, and we pack what comes back ourselves.
How to cook it

Sheet pan, 400°F, with peppers, onions and potatoes around them. One layer, not crowded.

Twenty-five to thirty minutes, turning once halfway.

Cook through to 160°F.

Or simmer them whole in tomato sauce for twenty minutes. The sauce gets better and the sausage stays juicy.
