What makes it different
Why the soak matters
A kidney's job in the animal is filtration, and if you cook one straight out of the pack you will taste that. An hour in salted water or milk, changed once, takes nearly all of it away. Skipping this is why people say they do not like kidney.
The trim
There is a white core of fat and vessels through the middle. Cut it out — it will not soften, and it carries most of what people object to.
Where it belongs
Steak and kidney pie is the famous use and it is famous for a reason: cooked long and slow with beef, the kidney becomes background depth rather than a flavor of its own. Sliced thin and fried hard with mustard is the fast version.
Almost every complaint about kidney is really a complaint about a kidney that was not soaked. Do that one step and it is a completely different ingredient.
FROM THE FARM
We raise our hogs on pasture here in Monticello, Kentucky, and have every animal cut at a USDA-inspected plant down the road. We raise them, we have them cut, and we pack what comes back ourselves.
How to cook it

Halve it and cut out the white core entirely.

Soak it an hour in salted water or milk, changing it once. Drain and pat it very dry.

Either slice it thin and fry it hard in a very hot pan, or cut it into chunks for a long braise with beef.

USDA guidance for organ meats is 160°F. In a braise it passes that long before the beef is tender.
