What makes it different
Center cut
It comes from the middle of the loin, where the muscle is most even. Every chop in the pack is the same thickness, so they all finish at the same time.
Lean, with the bone left in
There is not much fat on a loin chop, so the bone is doing the work. It holds heat and keeps the meat beside it from drying while the outside sears.
This is the chop to reach for on a weeknight. Fifteen minutes, start to finish. It is also the easiest one to overcook, because there is no fat here to forgive you.
From the farm
Take them out of the fridge half an hour before they go in the pan. A cold chop seizes up and cooks unevenly, and you end up with a grey ring around a raw middle.
How to cook them

Dry them and salt them. A dry surface is what browns. Wet meat steams, and steamed pork is grey pork.

Hot pan, hot fat. Two to three minutes a side. Leave them alone while the crust forms. Moving them is what stops it forming.

Pull them at 145°F. Then rest three minutes. The middle stays faintly pink, and that is exactly right for pork.

Do not pour off the pan fat. It is the whole sauce. A spoonful over each chop while it rests is all it needs.
