What makes it different
Fine grind, gentle seasoning
A brat is deliberately quiet — a fine grind with nutmeg, marjoram and white pepper rather than chili and garlic. It is a sausage that tastes of pork first.
Which is why the pork matters
With very little seasoning to hide behind, a bratwurst is a straight test of the meat. That is either a problem or the whole point, depending on where the pork came from.
The beer bath comes after, not before
The Wisconsin method is a gentle simmer in beer and onions once they are grilled. Boiling first splits the casing and washes the fat out.
The single best thing you can do to a brat is grill it over medium, not high. High heat splits the casing and everything good runs into the fire.
FROM THE FARM
We raise our hogs on pasture here in Monticello, Kentucky, and have every animal cut at a USDA-inspected plant down the road. We raise them, we have them cut, and we pack what comes back ourselves.
How to cook it

Medium grill or medium pan. Do not prick the casing — that is how the fat gets out.

Turn them often, every couple of minutes, so no side gets ahead of the others.

Cook through to 160°F. A brat takes about fifteen minutes over medium heat.

Then into a pan of beer and sliced onions on low, and leave them there until you are ready to eat. They only get better.
