What makes it different
Why necks
A neck is mostly bone and skin wrapped around small muscles that work constantly. Bone for body, skin for fat, working muscle for flavor — that combination is what makes a stock taste of chicken rather than of water.
Better than a carcass
A roasted carcass has already given up most of what it had. Necks are raw, so everything is still in them.
There is meat on them too
Not much per neck, but after a long simmer it falls off, and it is worth picking out for the soup rather than throwing away.
Add a few chicken feet if you have them. Necks bring flavor and feet bring body — together they make a stock nothing else matches.
FROM THE FARM
We raise our birds on pasture here in Monticello, Kentucky and have them processed at a USDA-inspected poultry plant. We grow them eight to ten weeks, which is two to four weeks longer than a commodity bird, and it is the single biggest difference you will taste.
How to use them

Rinse them. Roast them at 425°F for twenty minutes first if you want a darker, deeper stock.

Into a pot with onion, carrot, celery and peppercorns, covered with cold water. Bring it up, then drop it to a bare simmer.

Four hours at least. Skim whatever rises in the first twenty minutes and then leave it alone.

Strain it, chill it, and lift the fat off the top. Keep that fat — schmaltz is worth more than the stock.
