What makes it different
Mild means no chili
Italian sausage is defined by fennel, not by heat. The mild version leaves the crushed red pepper out, which makes it the one to reach for when children are eating, or when the sauce already has heat of its own.
Bulk means loose
No casing, so it browns and breaks up straight in the pan. That is what you want for ragù, lasagna, stuffed shells and pizza — anywhere you would have been slitting links open anyway.

Same idea in a casing, if you want them whole on a plate.
Brown it hard before anything wet goes in. That browning is most of the flavor, and once there is liquid in the pan you cannot get it back.
FROM THE FARM
We raise our hogs on pasture here in Monticello, Kentucky, and have every animal cut at a USDA-inspected plant down the road. We raise them, we have them cut, and we pack what comes back ourselves.
How to cook it

Medium-high heat, dry pan. No oil — there will be plenty within a minute.

Break it up, then leave it alone until the underside has real color on it.

Cook it to 160°F — ground meat does not follow the 145°F whole-cut rule.
4
Build the rest of the dish in the same pan. The browned bits on the bottom are the best thing in it.
