What makes it different
Why bulk instead of links
Because you do not always want links. Loose sausage becomes patties the size you actually want, goes into a gravy, or crumbles over eggs and biscuits. A link can only ever be a link.
The maple
Enough to taste, and not enough to turn breakfast into dessert. Sweet breakfast sausage goes wrong when the sugar takes over, and this one does not.
Patties, properly
Make them wider than you think and thinner than you think. They shrink, and a thick patty browns outside before the middle is done.
We make this because we wanted it ourselves. Sometimes a patty is the right shape and no link will do.
FROM THE FARM
We raise our hogs on pasture here in Monticello, Kentucky, and have every animal cut at a USDA-inspected plant down the road. We raise them, we have them cut, and we pack what comes back ourselves.
How to cook it

Form the patties and press a dimple into the middle of each one. They puff as they cook and the dimple keeps them flat.

Medium heat, dry pan. Do not press them while they cook — that just pushes the fat out.

Three to four minutes a side. Ground pork is done at 160°F.

Make the gravy in the same pan. A spoon of flour into the fat, then milk, and scrape everything up off the bottom.
