What makes it different
What a jowl is
The cheek. It works harder than any other muscle on the animal, and on a lard breed it is the fattiest thing you can buy — mostly fat, with seams of meat running through it.
Why people want it
This is the cut guanciale is made from, and guanciale is what carbonara and amatriciana were built around. Pancetta and bacon are the substitutes for it, not the other way round.
If you are not curing it
Cut it into thick lardons and render it slowly. What comes out of the pan is worth as much as what stays in it.
We sell this one whole and untouched on purpose. A cured jowl is somebody else's decision; an uncured one is still yours.
FROM THE FARM
We raise Mangalitsa here in Monticello, Kentucky, and have every animal cut at a USDA-inspected plant down the road. They grow slower than a commodity hog and they put that time into fat rather than lean, which is the whole point of the breed.
How to use it

The traditional cure is salt only. Weigh the jowl, then rub on 2.5% of that weight in salt, plus coarse pepper and anything else you like. Bag it, refrigerate it, turn it daily.

After about a week in the salt, rinse it, pat it dry and hang it somewhere cool and airy. It is ready when it has lost about 30% of its starting weight — usually three to five weeks. Weigh it, do not guess.

To cook it fresh instead, cut thick lardons and render them in a dry pan over low heat. Rushing it burns the outside before the fat lets go.

Keep the rendered fat in a jar in the fridge. It is the best thing you will fry an egg in all year.
