What makes it different
Belly, not bacon
The same cut bacon comes from, but nothing has been done to it — no cure, no smoke, no salt. It is a fresh piece of pork.
Why steaks
A whole belly is a project. Cut into steaks it is a twenty-minute dinner, and on a lard breed the fat renders fast enough to make that work.
Layers
Alternating meat and fat the whole way through. That is the point of the cut, and it is why it needs nothing done to it.
The mistake is cooking these like a chop. Start them in a cold pan — the fat needs time to let go before the meat is anywhere near done.
FROM THE FARM
We raise Mangalitsa here in Monticello, Kentucky, and have every animal cut at a USDA-inspected plant down the road. They grow slower than a commodity hog and they put that time into fat rather than lean, which is the whole point of the breed.
How to cook them

Score the fat side in a crosshatch, down to the meat but not into it. Salt it well and leave it twenty minutes.

Fat side down in a cold, dry pan, then turn the heat to medium. Starting cold is what renders the fat instead of burning it.

Eight to ten minutes on the fat side until it is deep brown, then two or three on the other. Pull at 145°F.

Pour the fat off as it collects and keep it. Rest five minutes. These are very rich — one steak feeds more people than it looks like it will.
