What makes it different
What it is for
Filling a freezer rather than planning one particular meal. Around twenty pounds of pasture-raised pork and twenty-one-day dry-aged beef, which is roughly a month of dinners for most households.
Two lines in one box
Our beef is dry-aged three weeks before it is cut. Our pork is raised on pasture and cut at a plant down the road. This box is both of them.

Buying in quantity is how a freezer stays full without a decision every week. Stock it once and cook out of it for a month.
FROM THE FARM
We raise beef, pork and chicken here in Monticello, Kentucky, and have every animal cut at USDA-inspected plants. Everything in this box came off our own farm.
How to store it

Clear the space first. Twenty pounds is more than it sounds when it lands on the counter.

Date everything as it goes in, and put the quick-cooking cuts at the front.

Thaw in the fridge, never on the counter. A roast takes two days and steaks take one.

Whole cuts of beef and pork are done at 145°F. Anything ground goes to 160°F.
