    Why we make it
    When one person develops Alpha-Gal
    the whole family's dinner routine changes. Most nights it means cooking twice — the regular meal, and the one that is safe. Nobody enjoys being the special plate.
    This is one meal
    everybody can eat. It is a straight swap for pork breakfast sausage — same seasoning profile, same job in the pan — made from chicken we raised ourselves, so there is no mammalian meat, fat or additive anywhere in it.
    Our birds live outdoors on green pasture with Non-GMO mineral-rich feed alongside. It is slower and it costs us more, but slow-grown chicken carries enough fat to make a sausage that stays moist in the pan instead of going dry and crumbly.
    From the farm
    It is sold in bulk, not in casings, and that is deliberate. Casings are where mammalian ingredients usually sneak into a sausage. Bulk also means you decide the shape — patties for breakfast, crumble for everything else.
    How to cook it
    01
    Patties. Form them about half an inch thick, medium heat, 4–5 minutes a side. Press them a little wider than you want them; they pull in as they cook.

    Crumbled. Break it up in a hot skillet and let it sit long enough to brown before you stir. The browning is most of the flavor.

    Skillet supper. Brown it with diced potatoes, onion and bell pepper. Eggs on top at the end if you want it to stretch further.

    Stuffed peppers, hash, burritos. It behaves like any bulk sausage — rice and tomatoes for stuffing, sweet potatoes for hash, eggs and peppers for burritos you can freeze.

    165°F, every time. Poultry sausage is done at 165°F all the way through. Check the thickest patty, not the pan.
