How the line is drawn
a ribeye is a ribeye because of where the carcass gets broken into primals, not because the muscle changes. Cross that line by an inch and the same longissimus muscle is suddenly chuck, and priced accordingly.
Here
that inch is the whole opportunity, and there are only two of them on an animal.
A chuck eye carries most of a ribeye’s marbling and a good deal of its texture, with a little more of the connective tissue that runs through the shoulder. Butchers have called it the poor man’s ribeye for as long as anyone has been paying attention. Cook it exactly like a ribeye — the method does not change with the price.
From the farm
Two per animal, and they sell to whoever knows to ask. This is a smaller portion cut from the roast.
How to cook it

Room temperature, dry, well salted. Half an hour out of the fridge. Pat the surface completely dry — a wet steak steams instead of searing.

Screaming hot pan, do not move it. Cast iron. Lay it down and leave it until it releases on its own. Moving it early is what stops a crust from forming.

Butter and baste at the end. Butter, a crushed garlic clove, thyme. Tip the pan and spoon it over for the last minute.

130°F, then rest ten minutes. Medium-rare. Times vary with thickness and are always an estimate; the thermometer is the instruction.
