How it gets to you

What to do with it
- Grill them slow. Indirect heat, turn them a few times, don’t split the casings. They’re already seasoned — don’t do a thing to them.
- Italian sausage and beans. Crumble it into a pot of white beans with an onion and let it go. Cheapest good dinner we know.
- Sheet-pan supper. Brats, quartered onions, peppers, 400°F until everything catches some color.
Who’s raising this
We’re a family farm in Monticello, Kentucky. Bob and Colleen run it, and we’re building it into something worth handing down. The animals are raised here, the meat is cut and packed here, and when you email the farm, one of us reads it.
