What to do with it

  • Grill them slow. Indirect heat, turn them a few times, don’t split the casings. They’re already seasoned — don’t do a thing to them.
  • Italian sausage and beans. Crumble it into a pot of white beans with an onion and let it go. Cheapest good dinner we know.
  • Sheet-pan supper. Brats, quartered onions, peppers, 400°F until everything catches some color.

Who’s raising this

We’re a family farm in Monticello, Kentucky. Bob and Colleen run it, and we’re building it into something worth handing down. The animals are raised here, the meat is cut and packed here, and when you email the farm, one of us reads it.

We’re not a marketplace putting our name on somebody else’s meat. If something in this box isn’t right, you’re not filing a ticket — you’re telling the person who raised it.

Questions people ask

How hot is the jalapeño cheddar?
Warm, not punishing. Most people who say they don’t do spicy are fine with it. The Mild Italian has no heat at all.
Are these fully cooked?
No — all three are fresh. Cook to 160°F internal.
How long do they keep?
Frozen, several months with no real loss. Once thawed in the refrigerator, cook within a couple of days.
Can I swap something out?
Not at the bundle price, but everything in it is sold individually in the store.
What if it shows up thawed?
Send us a photo the day it lands and we’ll replace it or refund it. No forms, no argument.
