What makes it different
They are not interchangeable
Hearts are muscle — dense, mild, and they taste like concentrated chicken. Livers are organ — soft, rich and strongly flavored. We pack them apart because cooking them together would ruin one of them.
The hearts
Thread them on skewers and grill them hard and fast, two or three minutes a side. This is yakitori and churrasco territory, and nobody who has eaten them that way thinks they should be this cheap.
The livers
High heat, short time, and off the pan while the middle is still faintly pink. Overcooked liver goes grainy and bitter, and that is where liver's reputation comes from.
The way we do them at home: wrap them in bacon, season them well, and put them under a hot broiler or over the fire. It works for both.
FROM THE FARM
We raise our birds on pasture here in Monticello, Kentucky and have them processed at a USDA-inspected poultry plant. We grow them eight to ten weeks, which is two to four weeks longer than a commodity bird, and it is the single biggest difference you will taste.
How to cook them

Rinse and pat both dry. Trim any green off a liver — that is bile and it is bitter. Hearts need nothing.

For hearts: skewer them, salt them heavily, and grill over the hottest part of the fire for two to three minutes a side.

For livers: very hot dry pan, ninety seconds a side, and do not crowd them. Or wrap them in bacon and broil until the bacon is done.

Poultry is done at 165°F. Livers are best right at that point and not a degree past — the texture goes fast.
