What makes it different
What it is
The rib end of the loin, left whole. Same meat as a rib chop — you are simply cooking it in one piece, which keeps it far juicier than cooking the chops separately would.
Lean, so temperature matters
This is loin meat. There is not much fat protecting it, and the difference between excellent and dry is about ten degrees. A thermometer is not optional on this cut.
Carving
Cut it across into thick slices. Each one is essentially a chop, and that is the appeal — a table full of them out of one roast.
145°F and a ten-minute rest. That is the entire method — everything else is seasoning.
FROM THE FARM
We raise our hogs on pasture here in Monticello, Kentucky, and have every animal cut at a USDA-inspected plant down the road. We raise them, we have them cut, and we pack what comes back ourselves.
How to cook it

Salt it the night before if you can, uncovered in the fridge. This is the single biggest improvement you can make to any lean roast.

Sear it in a hot pan, or start it at 450°F for fifteen minutes, then drop the oven to 325°F.

Roast until the center reads 145°F. Start checking early — it gets there faster than people expect.

Rest it ten minutes before carving, and cut it thick — thin slices of loin dry out on the plate.
