Breasts and ground are the two things people run out of first. This is a freezer that stays a week ahead of you.
From the farm
Ground chicken browns faster and drier than beef. Start it in a cold pan with a spoonful of fat and bring it up slowly — it stays tender instead of seizing.
How to cook it

Breasts, in the oven. 400°F for 18 to 22 minutes. 165°F at the thickest point, then rest five minutes.

Breasts, on the grill. 6 to 7 minutes a side over medium heat. Pull at 165°F.

Ground, as burgers. Four quarter-pound patties to the pound. 165°F — poultry burgers are not a medium-rare food.

Ground, in a skillet. Tacos, lettuce wraps, meatballs, a fast bolognese. 165°F.
