What makes it different
The same cut bacon comes from
Belly is where bacon comes from. This one has had nothing done to it — no cure, no smoke, no salt. It is fresh pork, sliced.
Why you would want it plain
Because bacon's flavor is the cure and the smoke, and sometimes that is not what a dish needs. Uncured belly tastes like pork. It is what you want for ramen, for Korean samgyeopsal, for braises, and anywhere bacon would take over.
It is also a starting point
If you have ever wanted to cure your own bacon, this is the cut — though a whole slab is easier to cure than slices are.
Cook it like bacon and it behaves like bacon, minus the salt and the smoke. Start it in a cold pan and let the fat render before the heat comes up.
FROM THE FARM
We raise our hogs on pasture here in Monticello, Kentucky, and have every animal cut at a USDA-inspected plant down the road. We raise them, we have them cut, and we pack what comes back ourselves.
How to cook it

Lay the slices in a cold, dry pan in one layer, then turn the heat to medium.

Let the fat render out slowly. This is the whole trick — high heat burns the outside before the fat lets go.

Turn them when the underside is deep brown. Pork is done at 145°F, though on a slice this thin you are really cooking to texture.

Salt them at the end rather than the start. Without a cure they need it, and they take it better once they are crisp.
