skirt is often sold trimmed hard and cooked like a normal steak, at a moderate temperature, to a moderate doneness. That is the one approach certain to make it chewy.
Here
we leave it whole, and it wants a screaming-hot fire and about three minutes of your attention.
The open, ropey grain that makes skirt look coarse is what soaks up a marinade and what gives it that concentrated, almost mineral beefiness. It is a working muscle, so it has both fat and connective tissue running through it — cook it fast enough and the fat renders while the tissue never gets time to tighten.
From the farm
Two per animal, and they are small. For a long time butchers took skirt home themselves rather than put it in the case.
How to cook it

Dry surface, hot fire, no crowding. Pat it dry and get the grill or the pan hotter than feels reasonable. Cook one piece at a time if you have to.

Barely cook it. A couple of minutes a side on a thin piece. The clock is only ever an estimate here — watch the crust, not the timer.

130°F and pull. Medium-rare. Past about 135°F this cut goes from tender to leathery quickly, and there is no getting it back.

Rest, then slice thin across the grain. Five minutes. Then cut it into short lengths first, and slice each one across the fibres.
