What makes it different
One box is one animal
One package of supermarket ground beef can hold meat from dozens of cattle, from more than one farm and sometimes more than one country. One box of ours is one animal, ground one animal at a time, never blended.
Ground at the USDA plant
Not on the farm. The same processor who cuts our steaks does the grinding, one animal at a time.
Dry-aged first
Our beef is dry-aged twenty-one days before it is cut. That is unusual for ground beef, because most ground beef is trim that never saw an aging room.
This is the one claim we would put in front of any competitor. One box, one animal, never blended — and it answers every real question people have about what is in their ground beef.
FROM THE FARM
Our cattle are pasture-raised here in Monticello, Kentucky and processed at a USDA-inspected plant. We raise them, we have them cut, and we pack what comes back ourselves.
How to cook it

Take out what you need and leave the rest frozen. Ten pounds goes further than it sounds.

Brown it in a dry pan over medium-high, and let it sit before you stir so it colors instead of steaming.

Ground beef is done at 160°F, not the 145°F used for whole cuts.

For burgers, handle it as little as you can. A packed patty cooks dense — shape it loosely and then leave it alone.
