Cut from the arm, just below the shoulder. Leaner than a chuck roast and a little firmer, with a single round bone through the middle when it is cut on the bone.

Leaner than chuck, and it matters
The mistake
treating it exactly like a chuck roast. There is less fat here to keep things forgiving, so a dry pan or a hot oven shows up faster and harder than it would on a fattier cut.
Here
give it more liquid and a lower temperature, and it rewards you with cleaner, beefier meat.
What arm roast gives up in richness it gets back in yield — there is simply more edible meat per pound than on a marbled shoulder cut, and it shreds into long, clean strands rather than falling into mush. If you are cooking to have leftovers, this is the better of the two roasts.

How to cook it

Sear every face. Including the edges. Take your time here — it is the only chance to build roasted flavour.

More liquid than you would give a chuck. Two-thirds of the way up rather than half. This cut has less fat to protect it and the liquid does that job instead.

Keep the oven low. Around 300°F, covered. A hard boil tightens the muscle before the collagen has a chance to let go.

Fork-tender, about 200–205°F. Check by feel, not by time. When a fork turns freely it is ready, and if it is still fighting you it just needs longer.
