What makes it different
What a quarter hog is
A quarter of one animal, broken down into the cuts a household actually uses — chops, roasts, sausage and bacon. Not a random assortment, but a proportional share of the whole hog.
Why the exact mix varies
Hogs are not identical and small processors do not cut to a spreadsheet. The total lands around twenty-eight pounds; the precise count of each cut depends on the animal.
It is all one animal
Everything in this bundle came off the same hog. That is not true of anything you buy by the package in a grocery store.
This is how people bought meat before supermarkets, and it is still the most sensible way to fill a freezer with something whose origin you know.
FROM THE FARM
We raise our hogs on pasture here in Monticello, Kentucky, and have every animal cut at a USDA-inspected plant down the road. We raise them, we have them cut, and we pack what comes back ourselves.
How to store it

Make room before it arrives. Twenty-eight pounds takes more freezer space than most people expect.

Put the sausage and the bacon at the front. They are what you reach for first, and the roasts can wait at the back.

Write the date on everything. Sealed pork keeps well, but a year from now you will not remember which month it came.

Thaw in the fridge, never on the counter. A roast needs two days — plan further ahead than feels necessary.
