Why cooks go looking for these
Stock made from bones alone
tastes fine and pours like water. There is not enough connective tissue in a picked-over carcass to give a broth any body.
Feet are the fix
they are almost entirely skin, tendon and cartilage. Simmer them and that collagen goes into the pot. Chill the result and it sets firm enough to hold a spoon upright.
Cooks across a lot of traditions have known this for a very long time — Chinese, Filipino, Jamaican, Mexican and Southern kitchens all use them, braised and seasoned as a dish in their own right as well as for stock. Ours come off pasture-raised birds with Non-GMO mineral-rich feed, cleaned and packed by the pound.
From the farm
We pack these by the pound because they are worth selling rather than throwing out. A bird that spent its life outdoors scratching in dirt has feet that did real work, and it shows in what they give back to the pot.
How to use them

Stock, the main event. Cover a pound with water, bring it to a bare simmer and hold it there four hours. Skim the first twenty minutes. Strain and chill — if it does not set to jelly, you boiled it instead of simmered it.

Blanch first if you want it clear. Two minutes in boiling water, drain, rinse, then start the real pot. It costs you ten minutes and gives you a clean-looking broth.

Braised. Soy, ginger, garlic, star anise, an hour and a half covered. Served as a dish, not an ingredient — this is how most of the world eats them.

Fried or baked. Season them, bake at 400°F for 40 minutes or fry them until the skin blisters. Crisp outside, soft underneath.

165°F, every time. Poultry is done at 165°F. For stock you are well past that anyway — the four hours is about collagen, not safety.
