How to store, freeze and thaw meat safely
Short answer: Cold and clean are the two rules for storing meat. Keep it refrigerated or frozen, thaw it in the refrigerator, in cold water or in the microwave, and do not leave it sitting out. These answers cover how long meat keeps and what is safe when plans change.
How long can raw ground beef stay in the refrigerator?
USDA guidance is one to two days at 40°F or below. If you will not use it in that window, freeze it.
How long can raw steaks and roasts stay refrigerated?
USDA guidance is three to five days at 40°F or below for fresh beef steaks and roasts. Package instructions and any earlier use-by direction still matter.
How long can cooked meat stay refrigerated?
A general USDA window for cooked meat leftovers is three to four days at 40°F or below. Reheat leftovers to 165°F.
What are the safe ways to thaw meat?
Use the refrigerator, cold water changed regularly, or the microwave. Do not thaw meat on the counter; cook promptly after cold-water or microwave thawing.
How long can meat sit out?
Refrigerate perishable food within two hours, or within one hour when the air temperature is above 90°F. If it has been warmer than 40°F beyond that limit, the safe answer is to discard it.
Is frozen meat safe if it arrives partly thawed?
If it still has ice crystals or is 40°F or below, USDA says it can be used or refrozen. If it has been above 40°F for more than two hours, discard it and contact the seller.
Can I refreeze meat that arrived cold but soft?
Yes, if it remained 40°F or below; quality may decline. Take its temperature, photograph the package and follow the seller's problem-reporting policy if you are unsure.
How long is frozen meat safe?
Food kept continuously at 0°F stays safe indefinitely, but quality declines over time. Packaging, fat level and freezer conditions determine how well it eats later.
Is freezer-burned meat unsafe?
Freezer burn is a quality problem, not automatically a safety problem. Trim badly dried areas if you choose to use it, and improve the packaging to keep air out next time.
Does a best-by date mean meat is unsafe the next day?
Usually not. Most date labels describe quality rather than an automatic safety cutoff, so storage time, temperature, package condition and product instructions still matter.
