A lean braise
needs stock, needs body, needs something to give the sauce weight. Cooks add gelatin, reduce for hours, or accept a thin result.
Here
oxtail brings all of it with the meat.
The collagen that makes raw oxtail look like an impossible cut is the same collagen that melts into the liquid and gives it a texture nothing else produces — a sauce that coats a spoon and sets in the fridge. This is the backbone of oxtail stew across the Caribbean, of Korean kkori gomtang, of Italian coda alla vaccinara. Every one of those traditions found the same cut for the same reason.
From the farm
One tail per animal, cut into a handful of packs. It sells out before most people know we had it.
How to cook it
01
Brown the pieces hard, then pour off the fat. Deep colour on every side. Then tip the rendered fat out before the liquid goes in, or the finished dish is greasy.

Cover it, and include something acidic. Wine, tomato, vinegar. Oxtail is rich enough that acid is not optional — it is what keeps the dish from being heavy.

Low and slow, hours not minutes. Around 300°F with a lid, or a very gentle simmer. Any time quoted is an estimate; tails vary.

Done when the meat slides off the bone, about 200–205°F. If it resists, it is underdone, not overdone. Best cooked a day ahead so you can lift the set fat off cold and skim it clean.
