Store stock
is usually water, salt, yeast extract and flavouring. It will not gel in the fridge, because there is very little actual bone in it. That is the honest tell.
Here
these bones make stock that sets solid when it cools.
That set is collagen, drawn out of joint and marrow over a long slow simmer, and it is what gives a sauce body and a soup the quality people call rich without knowing why. It costs a pot of water and an afternoon you were mostly home for anyway. Roast the bones first — that one step is the difference between pale stock and something with real depth.

This is the cut that made us start selling bones separately. People kept asking.
How to cook it

Roast the bones before anything else. Around 450°F until deeply browned. Skipping this gives you pale, flat stock — it is the single most important step.

Cold water, then bring it up slowly. Cover the bones, add an onion, a carrot and a bay leaf. A splash of vinegar helps draw minerals out of the bone.

Never let it boil. A bare shiver on the surface. A rolling boil emulsifies the fat into the liquid and turns the stock cloudy and greasy — it cannot be undone.

Long is better than short. Many hours for beef bones. You will know it worked when the cooled stock sets to a jelly. Strain it, chill it, lift the fat off the top.
