short ribs cooked quickly are genuinely unpleasant — tight, greasy and chewy all at once, because the fat has rendered but nothing else has had time to change.
Here
the same ribs held low and slow become the richest thing you can put on a plate.
There is more going on in this cut than almost any other: intramuscular fat, sheets of collagen between the muscles, and bone with marrow in it, all cooking together. Give it the hours and every one of those contributes something. The bone alone puts body into the braising liquid that you cannot get any other way.
From the farm
This is the cut we point people to when they say pasture-raised beef tastes lean. It does not, not here.
How to cook it

Brown them hard, then pour the fat off. Colour on every side. Then tip out the rendered fat before the liquid goes in, or the finished braise will be greasy.

Braise them barely covered. Stock and something acidic — wine, tomato, a splash of vinegar. The acid cuts the richness and helps the collagen along.

Low oven, lid on, hours not minutes. Around 300°F. Any time you have read is an estimate; ribs from different animals finish at different points.

Done when the meat pulls off the bone, around 200–205°F. If it resists, it is not done — it is never overcooked, only underdone. Best made a day ahead so you can lift the fat off cold.
