Tenderness is not flavour
The trade
the tenderloin sits tucked under the spine and never carries weight, so it never builds the connective tissue that makes other cuts chewy. It also never builds the fat and the deep beef flavour that come with work. That is the honest trade in this cut.
Here
aging is what puts the flavour back.
Twenty-one days of dry aging concentrates what is there and gives a lean cut something to say. It is why a dry-aged filet tastes like beef and a wet-packed one often tastes like nothing much. Cook it to medium-rare and stop — every degree past that costs you the only thing this cut is famous for.
From the farm
This is the smallest muscle we sell and there are only two on an animal. When we have them, we have very few.
How to cook it

Take the chill off first. Thirty minutes or so on the counter. A cold centre cooks unevenly, and on a portion this thick that shows up as a grey band.

Dry it, salt it, get the pan hot. Pat the surface completely dry. A wet steak steams instead of browning, and browning is where the crust comes from.

Sear hard, then finish gentle. Two or three minutes a side in a hot pan for the crust, then a low oven or the cool side of the grill to bring the middle up slowly.

130°F and off the heat. That is medium-rare, and it is the only number that matters here. Any cooking time is an estimate; the thermometer is not. Rest it ten minutes before you cut.
