What makes it different
What they are
When we slice bacon, the ends of each slab will not make neat rashers. Those ends are these — same belly, same cure, same smoke, cut into thick irregular chunks instead.
The cure
We use the natural nitrates found in celery and cherry rather than chemicals. Same job, same safety, different source.
Where they beat slices
Anywhere bacon is an ingredient rather than a strip — beans, greens, chowder, carbonara, a pot of pintos. Thick chunks hold their shape and their chew where a rasher would vanish.
These are the cook's cut. Nobody puts bacon ends on a breakfast plate — they go in the pot, and the pot is better for it.
FROM THE FARM
We raise our hogs on pasture here in Monticello, Kentucky, and have every animal cut at a USDA-inspected plant down the road. We raise them, we have them cut, and we pack what comes back ourselves. These come off the ends of the same slabs we slice our bacon from, cured and smoked the same way.
How to cook them

Cut them into whatever size you want. They arrive as irregular chunks — that is the nature of an end.

Cold pan, medium heat, and let them render slowly until the edges crisp.

Lift them out and keep the fat. It is the most useful thing in the pan.

Or skip all that and drop them into a pot of beans at the start. Four hours later there is nothing left to crisp and everything tastes of bacon.
